De eerste stappen zijn gericht op het verwijderen van niet-eiwitcomponenten:<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Reinigen en ontpitten:<\/strong> Sojabonen worden schoongemaakt om onzuiverheden te verwijderen. De schillen worden vervolgens verwijderd omdat ze veel vezels en weinig eiwitten bevatten. Dit proces is gebaseerd op het isoelektrisch punt van soja-eiwit (pH 4,5).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-1-solubilization-alkaline-extraction\">1. Oplossing (alkalische extractie)<\/h3>\n\n\n\n<p>Het fijne sojameel wordt in grote tanks met water gemengd. Er wordt een alkalische oplossing (zoals natriumhydroxide) toegevoegd om de pH te verhogen tot ongeveer 7,0-9,0. In deze alkalische omgeving wordt het soja-eiwit zeer oplosbaar en lost het op in het water, terwijl de onoplosbare vezels (sojameel) vast blijven.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-2-separation\">2. Scheiding<\/h3>\n\n\n\n<p>De brij wordt door snelle industri\u00eble centrifuges geleid. De centrifuges scheiden de onoplosbare vezels af, waardoor een &quot;eiwitrijke vloeistof&quot; (wei) overblijft.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-3-precipitation-acidification\">3. Neerslag (verzuring)<\/h3>\n\n\n\n<p>Om het eiwit uit de vloeistof te &quot;isoleren&quot;, wordt de pH verlaagd tot het iso-elektrisch punt (pH 4,5) met behulp van een zuur, zoals zoutzuur of fosforzuur. Bij deze specifieke pH wordt soja-eiwit onoplosbaar en slaat het neer uit de oplossing, waardoor vaste wrongel ontstaat.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-4-washing-and-neutralization\">4. Wassen en neutraliseren<\/h3>\n\n\n\n<p>De eiwitwrongel wordt meerdere malen gewassen om resterende suikers (oligosacchariden) en zouten te verwijderen. De gezuiverde wrongel wordt vervolgens geneutraliseerd tot een pH van ongeveer 7,0 om de oplosbaarheid en functionaliteit te herstellen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-phase-4-pasteurization-and-spray-drying\">Fase 4: Pasteuriseren en sproeidrogen<\/h2>\n\n\n\n<p>De uiteindelijke eiwitsuspensie wordt verhit (gepasteuriseerd) om de voedselveiligheid te garanderen en eventuele resterende antinutri\u00ebnten (zoals trypsineremmers) te deactiveren. Vervolgens wordt het in een sproeidroger gepompt.
