Het wordt veelvuldig toegepast in vleesproducten, zuivelalternatieven, voedingsrepen, sportvoeding en plantaardige dranken. In de industri\u00eble productie stagneert de SPI-opbrengst (ook wel herstel genoemd) echter al lange tijd op 751 TP3T\u2013881 TP3T, waarbij 101 TP3T\u2013251 TP3T aan eiwit verloren gaat in okara, wei en procesverliezen. Dit blijft een belangrijk knelpunt dat de kosteneffici\u00ebntie en het gebruik van grondstoffen beperkt.<\/p>\n\n\n\n<p>De kernbeperking van het traditionele alkalische extractie- en zure precipitatieproces ligt in het feit dat de eiwitlichamen in ontvette sojameel strak ingekapseld zijn in celwandfragmenten, vezelnetwerken en restolie, waardoor het voor de alkalische oplossing moeilijk is om volledig door te dringen en alle eiwitten op te lossen. Als gevolg hiervan blijft een aanzienlijk deel van de eiwitten onoplosbaar in de okara. De laatste jaren is aangetoond dat ultrafijn malen van soja-eiwitisolaat in combinatie met luchtclassificatie \u2013 als droge fysieke voorbehandeling \u2013 een van de meest kosteneffectieve upstream-technologie\u00ebn is om de SPI-opbrengst te verbeteren. Waarom? <a href=\"https:\/\/protein-dry-fractionation.epic-powder.com\/nl\/\" target=\"_blank\">Ultrafijn slijpen <\/a>Verbetert de extractie van soja-eiwitisolaat aanzienlijk.<\/h2>\n\n\n\n<p>In ontvette sojameel (doorgaans ge\u00ebxtraheerd met oplosmiddelen bij lage temperatuur, NSI 70\u201385) bestaat ongeveer 60%\u201370% van het eiwit als eiwitlichaampjes met een diameter van 1\u20133 \u03bcm. Deze eiwitlichaampjes zijn ingekapseld in celwandfragmenten van 0,5\u20132 \u03bcm dik, samen met kleine hoeveelheden cellulose- en hemicellulosenetwerken. Conventioneel malen (40\u201380 mesh, ~200\u2013400 \u03bcm) breekt alleen grote deeltjes af, waardoor veel eiwitlichaampjes nog steeds ingekapseld zijn. Tijdens alkalische extractie is het contactoppervlak tussen eiwit en oplosmiddel beperkt.<\/p>\n\n\n\n<p>Het doel van ultrafijn malen is om de totale deeltjesgrootte van het materiaal te reduceren tot 10\u201330 \u03bcm (D90), waarbij sommige delen zelfs 5\u201315 \u03bcm bereiken. Hierdoor worden de meeste celwanden mechanisch opengebroken en de eiwitlichamen vrijgemaakt. Op dit punt kan het specifieke oppervlak van het eiwit 5 tot 20 keer zo groot worden, waardoor de diffusieafstand voor de alkalische oplossing wordt verkort en de extractieweerstand van het eiwit aanzienlijk wordt verminderd.<\/p>\n\n\n\n<p>Belangrijker nog, in combinatie met luchtclassificatie kan eiwit vooraf worden verrijkt:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Eiwitlichaampjes met een dichtheid van ongeveer 1,3\u20131,4 g\/cm\u00b3, kleine deeltjesgrootte en hoge sfericiteit.<\/li>\n\n\n\n<li>Dichtheid van de vezelfragmenten \u2248 0,8\u20131,1 g\/cm\u00b3, grotere deeltjesgrootte, schilferig<\/li>\n<\/ul>\n\n\n\n<p>In een luchtclassificator (meestal een turbine- of cycloontype) wordt de lichte fractie (grove vezels) afgescheiden en gaat de zware fractie (eiwitrijk) naar de daaropvolgende extractiefase. Deze combinatie van &quot;droge voorverrijking + ultrafijne blootstelling&quot; kan het eiwitgehalte van de grondstof die de alkalische extractie ingaat verhogen van 48%\u201352% naar 58%\u201368%, wat de basis legt voor een hoge extractieopbrengst.<\/p>\n\n\n\n<p>Volgens literatuur en patenten kan ultrafijn droog malen in combinatie met classificatie de SPI-opbrengst over het algemeen met 8 tot 18 procentpunten verbeteren, waarbij in sommige geoptimaliseerde gevallen de 92%-95%-waarden zelfs worden overtroffen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-2-soy-protein-isolate-ultrafine-grinding-and-air-classification-process-pathway-and-key-equipment\">2. Conclusie en vooruitzichten<\/h2>\n\n\n\n<p>Het ultrafijn malen en luchtclassificeren van ontvette sojabonen is momenteel een van de meest industrieel haalbare methoden om de SPI-opbrengst te verbeteren.
