Het wordt veel gebruikt in voedingsmiddelen zoals vleesvervangers, voedingsdranken, zuigelingenvoeding, bakproducten en eiwitrijke snacks vanwege de uitstekende emulgerende, gelerende, oplosbaarheids- en nutritionele eigenschappen (hoge PDCAAS-score, compleet aminozuurprofiel). De productie van hoogwaardig soja-eiwitisolaat vereist nauwkeurige controle tijdens het malen van ontvette sojameel. Het doel is om het volgende te bereiken:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ultrafijne deeltjesgrootte (doorgaans D97 &lt; 20\u201350 \u00b5m, vaak 10\u201330 \u00b5m voor optimale functionaliteit)<\/li>\n\n\n\n<li>Een smalle deeltjesgrootteverdeling (PSD) zorgt voor een uniforme verspreiding en een aangenaam mondgevoel.<\/li>\n\n\n\n<li>Minimale warmteontwikkeling om denaturatie, oplosbaarheid en functionele eigenschappen van eiwitten te behouden.<\/li>\n\n\n\n<li>Lage verontreiniging en zorgvuldige verwerking voor voedselveilige zuiverheid.<\/li>\n<\/ul>\n\n\n\n<p>Onder de verschillende maaltechnologie\u00ebn \u2013 hamermolens, pinnenmolens, straalmolens, walsmolens en andere \u2013 <a href=\"https:\/\/protein-dry-fractionation.epic-powder.com\/nl\/\" target=\"_blank\">Luchtclassificatiemolens (ACM)<\/a> Ze onderscheiden zich als bijzonder geschikt voor SPI-slijpen. Voor de meeste SPI (10\u201330 \u00b5m) is ACM superieur.<\/li>\n\n\n\n<li><strong>versus pinnen-\/hamermolen + externe classificator<\/strong>ACM combineert beide in \u00e9\u00e9n unit \u2192 eenvoudiger ontwerp, kleinere afmetingen, betere PSD-regeling, minder warmteontwikkeling.<\/li>\n\n\n\n<li><strong>vs. walsmolen<\/strong>ACM-molens bereiken veel fijnere deeltjesgroottes met een smallere verdeling; walsmolens zijn alleen geschikt voor grof voormalen.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-conclusion\"><a href=\"https:\/\/protein-dry-fractionation.epic-powder.com\/nl\/contact\/\" target=\"_blank\">Conclusie<\/a><\/h3>\n\n\n\n<p>Luchtclassificatiemolens (ACM) zijn superieur voor het malen van soja-eiwitisolaat omdat ze de ideale combinatie bieden van ultrafijne deeltjesgrootteverkleining, scherpe deeltjesgrootteverdeling, verwerking bij lage temperatuur, hoge doorvoer en proceseenvoudigheid \u2014 allemaal cruciaal voor het behoud van de functionele, nutritionele en sensorische eigenschappen van SPI.<\/p>\n\n\n\n<p>In de moderne plantaardige eiwitproductie, waar consistentie, kosteneffici\u00ebntie en eiwitfunctionaliteit van het grootste belang zijn, blijft de ACM een bewezen, veelzijdig instrument voor toepassingen met soja- en andere peulvruchteiwitten.
