Onderzoekers van het Southern Institute of Louisiana, VS, hebben een resistent zetmeelproduct op basis van rijst ontwikkeld voor pati\u00ebnten met obesitas en diabetes. Rijst bestaat voor 20% uit kaf en voor 80% uit bruine rijst. De witte rijst die dagelijks wordt geconsumeerd, wordt verkregen door de zemelen en kiemen van bruine rijst te verwijderen om het endosperm te verkrijgen.<\/p>\n\n\n\n<p>Op basis van de deeltjesmorfologie en het amylosegehalte kan rijst worden ingedeeld in wasachtige rijst (0,8\u20132% amylose), kortkorrelige rijst (7\u201320%), middelkorrelige rijst (20\u201325%) en langkorrelige rijst (boven 25%).<\/p>\n\n\n\n<p>Momenteel bestaan de scheidingsmethoden voor rijstzetmeel voornamelijk uit alkalische weekprocessen, oppervlakteactieve stoffen, ultrasone processen en enzymatische processen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-structure-and-composition-of-rice-starch-particles\">Structuur en samenstelling van rijstzetmeeldeeltjes<\/h2>\n\n\n\n<p>Over het algemeen varieert de deeltjesgrootte van rijstzetmeel aanzienlijk tussen rijstsoorten. Kleefrijstzetmeel heeft grotere korrels dan indicarijstzetmeel, terwijl japonicarijstzetmeel de kleinste korrels heeft.<\/p>\n\n\n\n<p>Rijstzetmeel bestaat vaak in de vorm van samengestelde zetmeelkorrels, die ovaal of bolvormig zijn met een diameter van 7 tot 39 \u03bcm. De korrels behouden hun vorm en dubbelbreking.<\/li>\n\n\n\n<li><strong>Tweede fase:<\/strong><br>Zodra de gelatinisatietemperatuur is bereikt, absorberen zetmeelkorrels snel water en zwellen ze sterk op. De dubbele breking verdwijnt wanneer de kristallijne gebieden uiteenvallen. Zodra dit gebeurt, kan de oorspronkelijke korrelstructuur niet meer worden hersteld door afkoeling.<\/li>\n\n\n\n<li><strong>Derde fase:<\/strong><br>Bij aanhoudende verhitting vallen de gezwollen zetmeelkorrels uiteen en lossen verder op.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-characteristics-and-applications-of-rice-starch\">Kenmerken en toepassingen van rijstzetmeel<\/h2>\n\n\n\n<p>Rijstzetmeelkorrels zijn fijn, hebben een groot oppervlak en een sterk adsorptievermogen.
