Il est largement employ\u00e9 dans les produits carn\u00e9s, les alternatives aux produits laitiers, les barres nutritionnelles, les aliments pour sportifs et les boissons v\u00e9g\u00e9tales. Cependant, en production industrielle, le rendement en IPS (ou taux de r\u00e9cup\u00e9ration) stagne depuis longtemps entre 750 et 880 g\/L, avec des pertes de 100 \u00e0 250 g\/L sous forme d\u2019okara, de lactos\u00e9rum et lors des \u00e9tapes de transformation. Ce facteur demeure un goulot d\u2019\u00e9tranglement majeur, limitant la rentabilit\u00e9 et l\u2019utilisation optimale des ressources.<\/p>\n\n\n\n<p>La principale limite du proc\u00e9d\u00e9 traditionnel d&#039;extraction alcaline et de pr\u00e9cipitation acide r\u00e9side dans le fait que les prot\u00e9ines du tourteau de soja d\u00e9graiss\u00e9 sont fortement encapsul\u00e9es dans des fragments de parois cellulaires, des r\u00e9seaux de fibres et de l&#039;huile r\u00e9siduelle, ce qui rend difficile la p\u00e9n\u00e9tration compl\u00e8te et la dissolution de toutes les prot\u00e9ines par la solution alcaline. De ce fait, une proportion importante de prot\u00e9ines demeure insoluble dans l&#039;okara. Ces derni\u00e8res ann\u00e9es, le broyage ultrafin de l&#039;isolat de prot\u00e9ines de soja (IPS) combin\u00e9 \u00e0 un tri pneumatique \u2013 en tant que pr\u00e9traitement physique \u00e0 sec \u2013 s&#039;est r\u00e9v\u00e9l\u00e9 \u00eatre l&#039;une des technologies en amont les plus rentables pour am\u00e9liorer le rendement en IPS. Le broyage conventionnel (maille 40\u201380, ~200\u2013400 \u00b5m) ne fragmente que les grosses particules, laissant de nombreux corps prot\u00e9iques encapsul\u00e9s. Lors de l&#039;extraction alcaline, la surface de contact entre les prot\u00e9ines et le solvant est limit\u00e9e.<\/p>\n\n\n\n<p>Le broyage ultrafin vise \u00e0 r\u00e9duire la taille globale des particules du mat\u00e9riau \u00e0 10\u201330 \u03bcm (D90), certaines atteignant m\u00eame 5\u201315 \u03bcm, ce qui permet de rompre m\u00e9caniquement la plupart des parois cellulaires et de lib\u00e9rer les corps prot\u00e9iques. \u00c0 ce stade, la surface sp\u00e9cifique des prot\u00e9ines peut \u00eatre multipli\u00e9e par 5 \u00e0 20, raccourcissant ainsi le trajet de diffusion de la solution alcaline et r\u00e9duisant consid\u00e9rablement la r\u00e9sistance \u00e0 l&#039;extraction des prot\u00e9ines.<\/p>\n\n\n\n<p>Plus important encore, gr\u00e2ce au tri par air, les prot\u00e9ines peuvent \u00eatre pr\u00e9-enrichies\u00a0:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Densit\u00e9 des corps prot\u00e9iques \u2248 1,3\u20131,4 g\/cm\u00b3, petite taille des particules, sph\u00e9ricit\u00e9 \u00e9lev\u00e9e<\/li>\n\n\n\n<li>Densit\u00e9 des fragments de fibres \u2248 0,8\u20131,1 g\/cm\u00b3, taille des particules plus importante, aspect floconneux<\/li>\n<\/ul>\n\n\n\n<p>Dans un classificateur \u00e0 air (g\u00e9n\u00e9ralement de type turbine ou cyclone), la fraction l\u00e9g\u00e8re (fibres grossi\u00e8res) est s\u00e9par\u00e9e, et la fraction lourde (riche en prot\u00e9ines) est achemin\u00e9e vers l&#039;\u00e9tape d&#039;extraction suivante.
